Is there anything such as food and wine pairing or is it just snobbery?
According to Laura Ortiz, "food and wine pairing does exist, and it is not new. It is a practice that has existed ever since food ceased to serve a merely nutritional purpose and began to be considered a pleasure." Ortiz points out different pairing techniques: assessment, occasion, season and, the favorite one, “regional pairing.”
Regional pairing consists in combining food and beverages from the same geographic region, and it is ideal because it is created by and for people with a homogeneous taste. Each regional cuisine has given birth to a particular marriage: “Delicious examples are beluga caviar and vodka, foie gras and Sauternes, bellota ham and manzanilla sherry from Sanlúcar de Barrameda, and Argentinian barbecue and Malbec,” highlighted the experienced sommelier, who is also a consultant, a certified specialist in olive oil tasting, and a chef.

Without dollar devaluation, each winery makes an attempt to improve a declining profitability.
